Hello Fellow Foodies!
It’s officially summer, and today is the 4th of July, the biggest day of the year for BBQs and gathering with friends and family. As everyone anxiously awaits the fireworks, appetites are sated with all-American favorites like potato salad, BBQ chicken and ribs, and, of course, desert! What will you be grilling this year?
We Gourmet Girls really love our pork ribs that we recently made for a group of happy campers in the Santa Barbara back country. And they are so easy to make! We like to use St. Louis style pork ribs that we sprinkle with herbes de provence and salt and pepper, then wrap them up in heavy duty foil. When your coals are white, place the packet on the grill and cook for one hour. Unwrap the ribs carefully because there will be a lot of liquid and steam in the packet, brush on your favorite BBQ sauce, and place the ribs back over the coals to cook the sauce on. We turn them a couple of times, saucing at each turn. They will be fall-off-the-bone delicious!
Whatever you are barbecuing this year, we wish you a wonderful 4th of July and trust you will continue to believe in our wonderful nation and its democratic process. Keep in mind, we the people steer this country, not one single person. So keep the faith and pass the potato salad! Or the slaw! Or the grits and the collard greens! There are so many delicious sides that go with pork ribs. Corn with basil butter and flaky salt is one of our faves.
