Here we are nearing the end of another year, and change is in the air! The weather is getting cooler and the trees are turning red and gold. And it’s an election year. After November 8th our thoughts can turn to the important stuff . . . food! What on earth are we going to make for Thanksgiving and Christmas dinner this year? The same old recipes our families have been making for years, (okay, I know they’re wonderful!) or are we going to try something new? Let’s try something new!

Gourmet Girl Lyn came up with a wonderful dessert recipe for either Thanksgiving or Christmas. It’s “Lyn’s Persimmon Pudding with Cinnamon Rum Sauce.” It is delicious! And it’s just one of many delectable recipes in our new cookbook The Gourmet Girls Go Camping Cookbook.  Here it is, just in time for you to start preparing for the holiday onslaught of friends and family.

You can make this camping in a Dutch oven or in your stove at home.  To get the Dutch oven recipe you will have to buy the ebook or the soon-to-be-released print book.

Lyn’s Persimmon Pudding

Serves 6-8

Ingedients

2 cups persimmon pulp, mashed (use a potato masher)

1/2 cup butter

1 cup sugar

2 large eggs

1 cup flour

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/2 cup milk

1/2 cup buttermilk, or regular milk

Directions

Preheat oven to 350 degrees.  In a large bowl, stir together first 4 ingredients until blended. Add flour and next 5 ingredients, stirring well. Batter will not be smooth. Pour batter into a greased and floured 9×9 baking pan. Bake at 350 for 55 minutes. Serve with Cinnamon Rum Sauce.  Whip up fresh cream lightly sweetened for the top to make an extra yummy and sinful dessert.

Cinnamon Rum Sauce

Serves 6-8

Ingredients

1 cup sugar

1/2 cup butter

2 tablespoons flour

1 cup hot water

1 teaspoon cinnamon

1/2 teaspoon rum flavoring

Directions

Cook first 4 ingredients in saucepan over medium-high heat, stirring occasionally, 6-8 minutes until thickened. Stir in cinnamon and rum flavoring.  Pour over Persimmon Pudding. Yum!
