Try Sous-vide on Your Next Camping Trip!

The Gourmet Girls have rocketed into the new year like gangbusters! We received our print book two weeks before Christmas and sales are going well. We will begin marketing in earnest this month to get The Gourmet Girls Go Camping Cookbook out to magazines, retail outlets, bookstores, and others just in time for the 2017 camping season. We are very excited!

Gourmet Girl Denise, our executive chef, recently spoke with a local foodie and food writer about the new cooking sensation ‘Sous-vide.’ Being of French descent, she loves cooking and new cooking gadgets, so she just couldn’t help trying out this method. Here is the Wikipedia explanation of Sous-vide:

Sous-vide (/sˈvd/; French for ‘under vacuum’)[1] is a method of cooking in which food is sealed in a vacuum-sealed plastic pouch then placed in a water bath or in a temperature-controlled steam environment for longer than normal cooking times (usually 1 to 6 hours, up to 48 or more in some select cases) at an accurately regulated temperature much lower than normally used for cooking, typically around 55 to 60 °C (131 to 140 °F) for meat and higher for vegetables. The intent is to cook the item evenly, ensuring that the inside is properly cooked without overcooking the outside, and retain moisture.


It turns out that this is the perfect method of preparing food for your next camping trip! It’s already sealed, pre-cooked to just the right level, and all you have to do is place it on the grill to finish it, which you have to do even if you are cooking with this method at home.  The results are amazing! Meats come out moist and tender, and vegetables to exactly the right crunchiness. You simply seal the food item, put it in the water bath, select the cooking temperature, and walk away for a few hours. No standing over a hot stove on a sizzling day in July! Then, when you are ready to go on your camping trip, just put the sealed items in your cooler in the order you will be cooking them; first night on top. And voila!
